今次主要分享點煮,下次分享埋處理龍蝦步驟。
We would say Lobster Noodles is a very function dish. It can be a decent dish in a gathering with friends, it can be a dish for treating yourself after getting salary paid, it can be a little prize for your kids if they have done well in exam or you just want to eat a lobster, this dish is able to give you what you want.It’s not difficult to make but it can certainly bring joy to people. 上湯龍蝦伊麵 Lobster Noodles

顏色鮮豔既上湯龍蝦伊麵絕對係桌上既焦點,係屋企煮得到色香味俱全既餸,好有滿足感架
The vivid color of Lobster Noodles is definitely a spotlight in the meal. You will have a sense of achievement after making such a nice dish at home

龍蝦肉好甜,亦有拉過油既焦香味,不過今次唔好彩隻龍蝦係雪櫃長眠左,d肉有少少唔夠結實
The lobster meat was sugary and it’s with tantalizing aroma after briefly frying. But the texture was not very firm, probably because the lobster has already “slept” in fridge

話說同朋友經過西貢,去左ed艇仔檔睇岩左隻龍蝦
We bought the lobster from this kind of authentic boat hawker in Sai Kung

就係佢,斤幾重,$180,價錢又唔算好平,所以買左一隻過下癮就算
This is our lobster. 600g+ for HK$180. Can’t say it’s very cheap so we have just bought one for the noodles

準備好材料:龍蝦、伊麵兩底、乾蔥4粒、蒜頭2瓣、雞湯、牛油
口袋深d既朋友其實依個份量落兩隻龍蝦都得
Get ready the ingredients: lobster, 2 servings of yi mein, 4 bulbs of shallots, 2 cloves of garlic, chicken broth and butter
Readers with deeper pocket can have 2 lobsters for this portion of noodles

龍蝦處理留返下次講,今次由拆好龍蝦講起,斬開每邊蝦身三件
We will talk about the process of getting the lobster ready in a future post. In this post, let’s begin with chopping the lobster tail in 3 pieces

抹乾所有龍蝦件
Wipe dry all lobster pieces

生粉溝少少鹽,撲粉上龍蝦件,封好d肉,令炸佢時d肉唔會乾晒水
Mix a handful of salt with cornstarch. spread the powder mixture onto lobster pieces for retaining more juice inside the lobster flesh

準備好油,開大火至油滾
get ready a pot of oil. High heat on and wait for boil

放龍蝦略炸
Briefly fry the lobster pieces

直至龍蝦殼變成橙色,即係咁樣
Until the shell changes its color to orange like this

夾返上黎備用
Take them out with a pair of tongs

開滾水,落少少鹽,淥伊麵,30秒就可以撈上黎
Boil some slightly salted water. Yi mein in. Take it out right after 30 secs have passed

晾水,備用
Pour the pot of noodles and water through a colander. Set for awhile

準備好料頭
Prepare minced garlic and sliced shallots

係鑊上落牛油一片同少少頭先炸龍蝦既油,中細火煮熔
Melt and piece of butter on low heat, mix with some oil we used in frying the lobster

放料頭煎香
Garlic and shallots in

轉返中火,放龍蝦略煎,再灒少少紹酒
Switch to medium heat. Add the lobster and a touch of Shaoxing wine

加雞湯,預500ml左右,咁d伊麵索晒汁都仲有少少剩
Add around 500ml of chicken broth. That’s portion we will have some sauce left after the yi mein has absorbed the sauce

煮滾後加生粉水令個汁變稠
When it comes to boil, add cornstarch solution to thicken the sauce

鋪靚龍蝦係伊麵上,淋上汁,完成
Set the lobster nicely on the noodles, pour the sauce on top. Done!
