上湯龍蝦伊麵 Lobster Noodles
The vivid color of Lobster Noodles is definitely a spotlight in the meal. You will have a sense of achievement after making such a nice dish at home
The lobster meat was sugary and it’s with tantalizing aroma after briefly frying. But the texture was not very firm, probably because the lobster has already 「slept」 in fridge
We bought the lobster from this kind of authentic boat hawker in Sai Kung
This is our lobster. 600g+ for HK$180. Can’t say it’s very cheap so we have just bought one for the noodles
Get ready the ingredients: lobster, 2 servings of yi mein, 4 bulbs of shallots, 2 cloves of garlic, chicken broth and butter
Readers with deeper pocket can have 2 lobsters for this portion of noodles
Wipe dry all lobster pieces
Mix a handful of salt with cornstarch. spread the powder mixture onto lobster pieces for retaining more juice inside the lobster flesh
get ready a pot of oil. High heat on and wait for boil
Briefly fry the lobster pieces
Until the shell changes its color to orange like this
Take them out with a pair of tongs
Boil some slightly salted water. Yi mein in. Take it out right after 30 secs have passed
Pour the pot of noodles and water through a colander. Set for awhile
Prepare minced garlic and sliced shallots
Melt and piece of butter on low heat, mix with some oil we used in frying the lobster
Garlic and shallots in
Switch to medium heat. Add the lobster and a touch of Shaoxing wine
Add around 500ml of chicken broth. That’s portion we will have some sauce left after the yi mein has absorbed the sauce
When it comes to boil, add cornstarch solution to thicken the sauce
Set the lobster nicely on the noodles, pour the sauce on top. Done!
