有時我地會諗一個問題,就係點先為之香港菜? 好似依道酸辣汁粉絲乾燒大蝦我地用西式鐵鍋燒既方法煮蝦,又加左東南亞風格既酸辣汁,但又好港式咁用左粉絲去索汁,件事都幾亂咁黎,可唔可以話佢係香港菜?
對我地黎講,用香港人對唔同菜式既回憶,靈活咁煮出好味既菜式,就係香港菜喇! 再講,依度菜既概念其實黎自屋企人間中都會煮既茄汁煎蝦碌,但就用我地既方法將佢改頭換面,令佢更岩我地口味。下面就同大家分享我地點整依味酸辣汁粉絲乾燒大蝦既方法。
今次我地會用我地上篇介紹過,新入手既Skeppshult鑄鐵烤鍋黎燒蝦,最底會分享用後感!
Sometimes we wonder how should we define a Hong Kong style dish. Like in this dish, we used western way of pan searing prawns, dressed the dish by Southeast Asian style sweet and sour sauce and very “Hongkongesely” added glass noodles for absorbing the sauce. Can we say it’s a Hong Kong style dish?
To us, basing on the recollection of Hongkongese to cook delicious a dish and using whatever ingredients readily available is already the definition of a Hong Kong style dish. Check out how we made this Pan Seared Prawns with Sweet and Sour Sauce and Glass Noodles!
We are pan seared prawns using our brand new Skeppshult grill pan as introduced in our last article. We will share our using experience in the bottom of this article.

酸辣汁粉絲乾燒大蝦 Pan Seared Prawns with Sweet and Sour Sauce and Glass Noodles

乾燒大蝦顏色鮮艷好睇,大蝦烤得夠香口,粉絲索埋d汁,好好味!
做左幾樣野去令佢更岩我地口味。首先就係煎蝦碌既火候成日未去到令隻蝦有燒烤感既程度,我地就直接用烤鍋黎燒佢令佢更香脆,再者就係醬汁加上辣味同大量乾蔥同蒜頭令佢更惹味,最後就係用左粉絲索下汁,唔浪費任何整醬汁既功夫!
Colorful and aromatic. The prawns were seared with high heat to create a BBQ like flavor and the glass noodles absorb all the essence. Delicious!

乾燒大蝦下面既粉絲除左索左酸酸辣辣既醬汁味,仲索埋高溫所逼出既蝦油味,非常好食!
Apart from the sweet and sour sauce, the glass noodles also absorbed the prawn oil released from the prawns

酸辣汁粉絲乾燒大蝦材料有大蝦3隻、粉絲(用左泰國貨,爽口d)、乾蔥3粒、蒜頭1粒、茄汁同豆瓣醬
Ingredients included 3 giant prawns, glass noodles (we used the Thai one, it’s with more crunchy texture), 3 bulbs of shallots, 1 bulb of garlic, ketchup and chili bean sauce

大蝦要修剪同去腸,想睇睇方法可以睇返我地之前整金沙蝦個篇
Trim the stings and remove the guts. you may refer to our golden sand prawns recipe for the method

切好乾蔥同蒜頭
Chop the shallot and garlic

可以開始煮架喇,將浸軟剪開左既粉絲連同少少雞湯放入鍋,我地會輕輕煨一煨佢
Then we can proceed to cooking. Put the soaked and cut glass noodles and some chicken stock into a pot.

中火煮滾左就可以放上碟用黎氈底
Cook under medium heat and when it comes to boil we can set it on a plate

烤鍋要出場準備乾燒大蝦,開猛火,落油,由佢燒至油煙冒出
Here comes the grill pan. Switch on high heat, oil in, wait for smoke emerges

放蝦,灑d岩鹽上面,由佢燒分半鐘左右
Put the prawns in. Add a touch of rock salt and let it sear for one and a half minute

翻去另一面,都係加鹽再由佢燒分半鐘
Flip to another side. Add salt and let it cook for another one and a half minute

放上粉絲度,可以倒少少煎蝦油落去令佢更惹味
Place the prawns onto the glass noodles. We may also pour some prawn oil to enhance the flavor

最後就準備醬汁,煎香蔥頭同蒜頭
Finally we can make the sauce. Sautee the shallot and garlic

按喜好加入茄汁、豆辮醬、糖,如果有是拉差辣醬都可以加埋,細火煮勻佢,試味
Add ketchup, chili bean sauce, sugar according to preference. If you have Sriracha chili sauce, add some. Mix the sauce in low heat and test the taste

將醬汁都倒上就完成喇!
Pour the sauce in. Done!
Skeppshult鑄鐵烤鍋用後感 Skeppshult Experience Sharing
依個雷神鑄鐵烤鍋(拎上去墜手到誇張所以我地叫佢雷神鑄鐵烤鍋)我地最鍾意既地方係佢鑄鐵用料足,鍋底夠厚所以非常保溫。我地其實係煮醬汁既時候仍然將大蝦放係鍋中暖住,煮完個汁D辣放上粉絲時仍然非常熱辣辣!
當然用得鑄鐵材質,傳熱效率都一定係非常好,用黎煎野可以輕易做到外面焦脆內裡多汁既效果。
另外佢既極簡設計風我地都好鍾意,設計簡約,但用上既物料都係最好既,鑄鐵夠厚重,胡桃木手柄觸感亦非常好。
而佢的確係比一般既鍋都重身,不過用佢黎煮得既野食都唔需要拋鑊,反而佢可以穩定咁坐係爐頭上,用食物鉗翻動食物都唔會整到個鍋郁黎郁去,感覺更得心應手。
This Thor’s grill pan (it’s exceptionally weighty so we think it’s like Thor’s hammer) uses cast iron generously which is our favorite part about it. The bottom of the pan is very thick so the pan is exceptionally heat retaining. We warmed our prawns in the pan with stove off while we were making the dressing. Turned out the prawns were still nice and hot when we finished making the dressing.
And of course the pan has excellent heat conduction efficiency as it’s made of cast iron. It’s easy to create crispy texture on the outside of food while keeping the inside succulent.
The minimalistic design of the pan is also what we like. Simple and elegant. Uses the best materials in every details. Cast iron pan is weighty enough to deliver the luxury touch. Walnut handle looks premium.
Skeppshult cast iron grill pan is heavier than a normal pan but we don’t need wok tossing when using it so it’s fine. Actually its weight provides extra stability while cooking and the experience is better and stabler when we use tongs to flip the food.
