Are you ready for your Valentine’s Day meal? We seldom celebrate the festival at restaurant as we would just like to get rid of the charge surplus during the festival period. Are we not romantic at all? Depends how’s your definition but we think preparing a special Valentine’s Day meal at home is way more romantic. We are sharing our Surf and Turf cooking experience with you in this post!
We could have done the dish more exquisite but we had good ingredients and effort in it so it was quite sufficient for a romantic meal! (disclaimer: we made that for a birthday meal. Actually we have no idea what to make for the upcoming Valentine’s Day meal yet…)
情人節龍蝦拼熟成牛扒 Surf and Turf
- 火炙慢煮21日熟成US Prime牛肉眼 – 第一次買熟成牛返黎煮，牛味比新鮮牛香濃好多，超好食
- 蒜蓉牛油焗西澳紅龍蝦 – 製作方法簡單，但如果係新手，建議先睇睇點樣處理龍蝦
- 燒玉桂糖菠蘿 – 幾得意同好食，不過糖漿整得唔夠濃，未整到想要既脆口效果
There were 3 items in our Surf and Turf:
- Torched sous vide 21-day dry aged US Prime ribeye – It’s our first time to cook dry aged beef. The flavor was much richer than a fresh one.
- Baked Australian lobster with garlic butter sauce – it’s very simple to make. If you haven’t cooked a lobster before we recommend reading our article of how to process a lobster
- Pan fried sweet pineapple with cinnamon – it’s a fun item and it’s delicious. Yet our syrup wasn’t thick enough and the effect was not as we expected

We first prepare the pineapple a night before
Chop away the tips and remove the “eyes”
Trim it into strips
Put the pineapple into sugar water and add cinnamon. Put it in fridge for a night. Our sugar solution wasn’t concentrate enough so the effect wasn’t as good
Now it comes to the beef. This is where we bought our dry aged ribeye. We could have a chunk in whatever thickness we want. We bought a 300g one

Add some salt and pepper on the beef and then put it into a zipper storage bag together with some thyme. We liked it medium rare so we switched on 53 degree Celsius for 1hr. We have another article to elaborate how to make a sous vide steak
Now we can prepare the lobster. Regarding how to process a lobster you may refer to our previous article
Time to prepare the garlic butter sauce. First we put some butter into a pot, low heat on
Add minced garlic until the sauce becomes aromatic
Apply the sauce on the lobster. Preheat the oven to 200 degree. Bake the lobster for 5 mins at 180 degree and then 5 mins at 230 degree
Take out the pineapple and drain the water
Add no oil and heat the pineapple on medium heat
Until it turns a little bit charred. If the sugar solution was more concentrate, we should have done it nicer
Here comes the sous vided beef steak. We place it on a heat durable dish
Then torch it until the surface looks crispy
Our goal is to create the crispiness in the quickest way and keep the inside medium rare. Done!
