之前就分享左我地薑蔥霸王雞既做法,今次就繼續分享埋我地斬雞既方法。我地都唔係熟手技工,不過跟住方法黎斬雞,總算斬到隻見得到下人既雞。
斬雞之前,記住磨利把刀呀,刀唔夠鋒利既話,好容易就會跣到,有雞機會切到自己架!
Previously we shared our recipe of Steamed Chicken with Ginger and Scallion. In this article, we are going to continue to share our method of cutting up a whole chicken. We are not pro in this aspect but we guess it meets the standard of serving guests at home.
Before cutting chicken, make sure you have sharpened the knife otherwise it may slip and cut your fingers.
斬雞方法 Cutting Up a Whole Chicken

首先係頸同軀幹交界一刀斬開,想上碟放埋雞頭就係喉位斬多一刀
平時係餐廳食肉唔會有種覺得係生物係曾經有生命既感覺,但每逢買全雞返屋企自己處理,眼前食物既生命感覺就會強烈100倍,依d時候更提醒自己下廚時要將食材處理得宜,盡力整得好味,而作為食客亦要存感恩既心欣賞眼前食物,而且唔可以浪費食物,咁樣係對曾經有生命既食物既尊重。
To begin with, chop the neck at the intersection between the body and the neck. If the head is to be displaced on the plate, chop also at the lower part of the head
While eating meat in a restaurant we usually don’t have the idea of “consuming a life”. Nonetheless, for every time we processed a whole chicken at home, that thought popped up in our minds very vividly. That’s a reminder for us to making sure we handle the chicken properly as an ingredient. Do best to make it delicious and be respectful to the food.

好啦唔講經喇,下一步就係提起隻雞,係pat pat位沿住脊骨其中一邊順住拖刀落去
Next step, cut the chicken from its bottom alongside with one side of the spine

然後沿住脊骨另一邊,拖刀切埋落去,將pat pat連埋脊骨斬出黎
Then also chop alongside the other side of spine. This way we could take out the spine together with the chicken bottom

順住一路斬埋胸骨,去將雞斬成兩邊
Half the chicken by chopping through the sternum

係關節位斬走鳳爪
Remove the foot by cutting through its joint

然後輕輕提起雞翼,係圖示既雞翼關節位,45度斬入去
Lift the wing a bit and slice it thorough diagonally

砍開雞翼
Chop off the wing

跟住我地做一個叫「圈脾」既動作,顧名思義,用刀尖輕輕沿住雞脾外圈𠝹開雞皮
Circle the skin of the thigh by the point of the knife

揭開雞脾,搵到關節斬落去,分開雞脾
Flip the thigh out, locate the joint and cut it though

一刀分開胸背
Divide the breast and the back

將雞胸斬開4-5塊
Slice the breast into 4-5 pieces

鋪上碟
Put them on plate

雞背都一樣斬開4-5件
Do the same for the chicken back

然後脾都係一樣,斬開4-5件
And same for the thigh. Slice into 4-5 pieces

頭先斬出黎既雞翼位,係依個三角位斬一刀就可以
Chop the wing at the area as shown then we could divide it into 3 pieces

繼續將雞件鋪上碟
Continue to place the chicken pieces on plate

另一邊都係咁樣做
Do the same for another half of the chicken

咁就完成架喇!
Done!
