While getting used to the pandemic, are you also getting used to home cooking? This time we are introducing how to make one serving of Creamy Mentaiko Pasta. It’s very easy to make so you have no excuse not to make you own pasta next time!

明太子既海鮮咸香配搭濃稠既忌廉汁,非常好食,重點係15分鐘都唔洗就煮得起,岩晒懶人hea煮~

The savory flavour of mentaiko together with the thick cream sauce make this pasta exceptionally taste. Most importantly it just takes less than 15mins to make. An ideal pasta for a lazy person!

準備意粉,成日唔知一人份量應該係幾多?有個小方法幫到手,將拇指疊上食指由指尖數起既第2個關節上,依個洞所拎到既意粉,大概就係一人份量喇

Prepare 1 serving of pasta.
There is a little trick to quickly measure a serving. Put the 1st joint of thumb on the 2nd joint of index finger. The amount to pasta passing through the hole is approximate one serve

其他材料:牛奶、忌廉、明太子、鰹魚粉
Other ingredient: milk, whipping cream, mentaiko and dashi powder

要知意粉煮幾耐,可以睇睇每包意粉包裝上既說明,好似依款咁就係11分鐘,不過我地一般食意粉都追求al dente既彈牙感,所以整個烹煮過程唔會超過依個時間

The pasta package shows the cooking time for the pasta. Like this one it’s 11 mins. However if we are looking for the al dente texture, the total cooking duration should not exceed this suggested time

將意粉放入滾水,大火烚5分半鐘
記住水中要加入油同鹽為意粉添上底味
Pasta in salted boiling water. Cook on high heat for 5.5 mins

依個時候準備醬汁,牛奶100ml,忌廉100ml,鰹魚粉適量,溝埋
During this time, prepare the sauce. Milk 100ml, whipping cream 100ml, a handful of dashi powder. Mix well

準備明太子,用刀切開外皮
Prepare the mentaiko. cut through the skin with a sharp knife first

將裏面既魚籽向外翻開
then flip the roe inside out

然後刮晒出黎備用
take out all the roe

依個時候意粉應該剛烚起,撈起,並且留少少意粉水備用
The pasta should have been done now. Take it out and reserve some pasta water

開始煮醬汁
start to cook the sauce

醬汁滾起後加入意粉煮,中途如果個汁收得太乾,可按喜好加入頭先留起既意粉水
三分鐘後試下質感係咪自己鐘意,係既就可以熄火喇
Add the pasta to the pan when the sauce is boiled. If it turns too thick, add some pasta water.
After cooking for 3 mins, try the texture. If that’s the way you like, switch off the fire.

熄火後加入大半既明太子,拌勻就可以上碟
上碟後將餘下既明太子就咁鋪面就完成
After switching off the stove, add most of the mentaiko in. Stir well and serve it on a dish.
Then put the rest of the mentaiko on top of the pasta for decoration. Done!
