We feel tired easily amid the recently humid weather with drastic variance in temperature everyday. This Coconut Chicken Soup can definitely wake us up with its unique freshness.
In this article we are introducing a simple version we like so much. Without complicated steps we can make a pot of nice Coconut Chicken Soup to cheer the whole family up!

A melting pot of umami from chicken, freshness from coconut and sweetness from carrot. A perfect soup for spring/ summer time!

Very simple ingredients: a chicken, a coconut and a carrot
For the coconut we asked the shop to open it for us and they would pour the coconut water into a separate bag. We once tried to open a coconut on our own, trust us, it’s not a good idea.
Of course you can add more ingredients to this soup such as corn, chestnuts and lean meat and make it like the Sir’s Deluxe Soup. Yet, these 3 ingredients are the core and with them we can already make a nice pot of Chicken Coconut Soup
Boil a pot of water with chicken and a few slices of ginger
Until scum emerges
Rinse the chicken and half it. Remove head, neck and toes and the bottom
Chop coconut and carrot as shown and put them into a stock pot
Add chicken and water. Boil it and then close the lid and cook it for 2 hour on low heat
2 hours later
Set aside the chicken and remove the oil on the soup surface
Put the chicken back, add coconut water. Reboil it and it’s done!
Waterless steamed fish is also recommended lol
