極濃蕃茄薯仔魚湯 Ultra Thick Fish Stock with Potatoes and Tomatoes
Fish stock is easy to make and there are lots of combinations of ingredients it can go with. It’s definitely a nice dish for an ordinary home cooking meal. We applied waterless cooking skill this time to first bring out the umami of vegetable before adding fish stock. This simple trick can easily enhance the soup!
Ingredients include fish (we chose horse-head this time), tomatoes and potatoes
Also we had onion (turned out to be unnecessary as it’s not a good match) and some scallion (we eventually forgot to add that lol)
Chop the vegetable and put into a cast iron pot. Add a handful of salt and pepper and cover the lid, switch on low heat for 15 mins directly without adding any water
For waterless cooking we need a cast iron pot with excellent water retaining and heat insulating abilities. Now we can make the fish stock. Rinse the fish and make sure all bloody red areas are rubbed away for removing unpleasant fishy flavor
Ginger slices in, high heat on
Add the fish, keep the heat high. Sear until we can mash the fish
Add boiling water into the fish. The liquid turns milky right away. Switch to medium heat for 30mins
Filter away the residual fish with a sieve. A pot of concentrated fish stock is ready.
The vegetable has become softer after cooking and its umami was well brought out. After adding the fish stock we can turn on low heat to boil it for 10 mins and it’s done. After waterless cooking, vegetable juice will come out. As the pot has good sealing performance, most liquid is retained in the pot. We especially added less water to make the fish stock and that made the stock extra thick.
