泰式肉碎煎蛋飯 Pad Kra Pao Mhoo

泰式肉碎煎蛋飯係平時係泰國餐廳好鍾意點既一個飯,材料同做法都好簡單,但咁樸實既菜式,一食落口就感受到泰國既風味,甚至令我地兩公婆會回想起係泰國旅行,每日就係食盡泰式美食,再行下Big C超市,去下卧佛寺散步,或者做個spa,開心又悠閒既日子。簡單既食物最容易承載出人情味,令人百吃不厭!

Pad Kra Pao Mhoo is a dish we usually like to order at a Thai restaurant. Ingredients are simple and it’s easy to make. A simple dish like this, however, brings us back memory of our Thai trips. For the first bite of this dish, we instantly recall episodes of our delicacy hunting, shopping at Big C Market, taking casual walk at Wat Photaram and having a spa… All those good memories emerge like flashback. Simple food like this one can actually carry our memory!

簡單,美味,令人回憶起係泰國悠然渡假既一個飯

Simple and delicious. It also reminds us of our pleasant time spending our vacation in Thailand

主要材料好簡單,免治豬肉、羅勒葉20塊左左、2隻雞蛋、魚露

Main ingredients are simple. Minced pork, basil (~20 leaves), 2 eggs and fish sauce

調醬汁。魚露一湯匙,生抽老抽各一茶匙,蠔油兩茶匙,少少糖,試味

Mix the sauce. 1 tbsp of fish sauce, 1 tsp of light and dark soy sauce respectively, 2 tsp of oyster sauce, some sugar. Test the taste

中火炒香蒜蓉同辣椒絲

Saute minced garlic and chilli pepper slices on medium heat

加入豬肉,略略炒香

Add pork and gently sautee

倒入醬汁,將豬肉繼續煮熟

Add the sauce and cook the pork for awhile until it’s done

另一邊廂,煮飯。我地煮飯鍾意用鑄鐵鑊,方便又好味d

On the other hand, prepare rice. We like to use cast iron pot for making rice. It’s convenient and more delicious.

用個飯碗吸個落碟,咁就靚仔晒

Use a bowl to mould the rice

返黎肉碎依邊。加入羅勒葉,拌勻,熄火

Back to the pork. We add basil, mix well and then switch off fire

再煎埋隻蛋就完成。煎蛋心得係唔好怕落多少少油,將油以大火燒熱先放蛋,一路煎一路剷底,確保佢無痴底,煎到個邊焦脆變啡色就可以喇!

Stir-fry an egg then it’s done. To make a nice stir-fried egg, we may add a bit more oil. Heat the oil until it’s hot enough. While cooking, keep stirring the bottom to make sure the egg doesn’t stick on the pan. Done when the edge of the egg turns brown and crispy.

係泰國渡假既日子總係非常悠閒,每次去都可以放低煩惱,並從閒中得力,等自己返香港更有動力處理生活挑戰。希望快d有得再去啦!

It’s always relaxing to spend vacation time in Thailand. We could just leave our vexation behind and get recharged. We wish we can go there again soon!
