Seasonable velvet shrimps were available when we went to wet market today. We bought 300g of them. Together with another 300g of clams, we made this Seafood Duo in Sake

Both kinds of seafood were very fresh and savory. Together with the aromatic sake, it was just fantastic. After eating for a while we felt a bit drunky. Probably less sake should be added next time lol
velvet shrimps are tiny but they with strong flavour of shrimps.
For this dish we bought 2L of sake deliberately.
Chop off the antennae and stings of the shrimps. Add some sake together with garlic to soak the shrimps for around 30 mins.
Actually 150ml of sake will do but we added more than 200ml
Saute garlic, scallions and chilli pepper on medium heat
Add clams and the sake used in soaking the shrimps.
Of course the clams need to be soaked in salted water for awhile for removing the sand inside
Then we can add the shrimps. Wait until boiled and then close the lid, switch to low heat and cook for 2 mins
Open the lid, season with Japanese soy sauce
After switching off fire, add a handful of butter for a more creamy texture of the soup
We have taken a few shrimps out and boiled them for our cats. They just LOVED it!
