簡易版氣炸乳鴿 快靚正! Simplest Air Fried Squab

我地真係好鍾意係屋企煮傳統港式食物,今次就分享紅燒乳鴿點樣係煮企煮。

一般係大排檔食既乳鴿都要用麥芽糖上皮水,搞一大輪先拎去燒,今次我地就用左簡單版既方法,輕鬆咁係屋企整,味道媲美出面食,好值得分享!

We just love cooking traditional Hongkongese cuisine at home. In this article we are going to share our airfrying version of making Chinese fried squab.

Normally when you have this dish at a dai pai dong, the way they make it is more complicated. This time we adopted an easy way to make it so even at home there is no difficulty in preparing this mouth watering dish.

味道同出面有得揮,而且超級易整,美中不足係個皮無出面食既咁脆(都係脆身但口感較薄),不過以容易整既程度黎講,我地都無投訴了

It just tasted very similar to the dai pai dong version. Together with the fact that it’s very easy to make, we really recommend readers to try making this dish

材料只係有兩隻乳鴿(都係凍肉店買既平價貨)同埋醃料

Ingredients are simple. Just 2 squabs bought from frozen meat store and marinade

先清洗好乳鴿

first wash the squabs thoroughly

剪去小腿、patpat同清理內腔

Trim the calf, the bottom and remove organs if any

抹乾

Wipe dry it

調製醃料:生抽老抽紹興各一湯匙,鹽糖五香粉各一茶匙

Now we mix the marinade.
1tbsp of light soy sauce, dark soy sauce and Shaoxine wine
1tsp of salt, sugar and 5-spice

將醃料均勻塗上乳鴿

Apply marinade evenly on the squabs

由佢醃3個鐘

Let it marinate for 3 hours

然後就可以放入氣炸鍋喇,先用180度氣炸15分鐘

Then we could put them into airfryer. First set 180°C for 15 mins

氣炸完脹卜卜

It looks bigger right after airfrying

反轉,再用180度氣炸多5分鐘就得喇

Flip the squabs and set 180°C again for 5 mins. Done!

上碟前每隻乳鴿切開4份就可以開餐喇

Before serving, chop each squab into 4 pieces. Bon appetit!
