Braised Tofu in PotHere comes our first reader’s contribution! This mouth watering braised tofu pot is suitable for serving in a daily family meal or gathering with friends!
紅燒豆腐煲 Braised Tofu in Pot
Each family has their own braised tofu recipe. The version we share here serves with dried Chinese mushroom together with Chinese sausage. They serve well with the tofu and make the pot appetizing
We used Puning tofu for the pot. It has firm texture with strong aroma of bean.
First we soak the dried mushroom in water overnight and then dry it with a towel
Chop the tofu into large pieces and slice the Chinese sausage
For getting rid of oil splash during frying, we better make sure the tofu and the dried mushroom are not watery
To stir-fry the tofu we need more vegetable oil
Stir fry the tofu in medium heat until it turns golden brown. We need to be patient here as it can take 8-10 minutes for this step
During stir-frying we could prepare shallot, garlic and chilli pepper
Take the nicely fried tofu from the wok
Heat some oil in a wok shallots, garlic and chilli pepper in
Add the mushroom and the Chinese sausage

Add the sauce
The sauce is made up of oyster sauce, soy sauce, shaoxing wine, pepper powder, water and a touch of sesame oil
When all the ingredients are evenly colored, we can add corn starch solution to thicken the sauce. Then it’s time to serve it in a pot. After that we can put the pot on medium heat for awhile for nicer flavour
Spread a handful of diced scallion, done!
