We bought the oxtail from wet market. It happened that this was the last pack they have. some of the pieces were quite fatty. It’s better to choose ones with less fat
Step 1, with some ginger, boil the oxtail from cold water. This can boil out the greasy foam from the oxtail
When the water boils, greasy foam is out
Prepare 3 tomatos, 1 carrot and 1 onion
Step 2, chop chop chop
Step 3, together with 100ml of chicken broth, 100ml of red wine, tomato paste, ketchup, bay leaves, thyme, add all the vegetables into pot. When it comes to boil, add the oxtail. Close the lid, simmer on low heat for 2-3 hours and then switch off fire and let it rest for half an hour
Step 4, we stir-fried some mushroom and put it in as well. Cook for 15 mins more. Done!
