據小夫妻非正式調查,好多想自己整西餐又嫌麻煩既朋友都會選擇買塊三文魚扒,煎完再加個薯菜/意粉就完成。今篇主要分享點樣可以係依道簡單西餐,加少少技巧,令佢更提升。重點係點樣可以煎到脆皮煎三文魚,塊皮唔爛之餘,仲好似薯片咁脆!
According to our observation, pan seared salmon is a very popular dish for those who would like to make Western style food in a quick way. Together with some potatoes, vegetables and pasta, this dish is really easy to make. In this article we are going to share how to upgrade the dish by some little techniques. Most importantly, how to make the salmon skin crispy like chips.
脆皮煎三文魚 Crispy Pan Seared Salmon

今次我地都係想簡簡單單為主,整左依個脆皮煎三文魚,加個南瓜蓉底同埋少少沙律菜伴碟。塊三文魚皮煎完出黎仍然係相當完整,而且脆卜卜
For this meal we just wanted something easy to make so we chose to sear salmon and serve it with mashed pumpkin and greens. As you can see, the salmon skin looks intact and crispy

材料超簡單,三文魚兩塊、百里香、南瓜半個同埋牛油
Ingredients are simple. 2 pieces of salmon, some thyme, half a pumpkin and some butter

先用粗鹽同黑椒醃一醃三文魚,10分鐘左右
To begin with, marinate the salmon with some crude salt and black pepper for 10 mins

令三文魚皮煎得餐廳級賣相就係靠佢 -— 牛油紙!
So this is the secret of making the perfect salmon skin – non stick cooking paper

先係鑊面掃少少油,然後鋪上牛油紙,再係上面掃少少油,開中細火,燒到鑊發出嗞嗞聲,就可以放入三文魚
First brush a touch of oil onto the pan. Then place a piece of non stick paper on top and brush some oil on it again. Small-medium heat on. When the sizzling sound can be heard, add the salmon

三文魚本身都有油份,當見到佢開始煎到出油,就可以加入適量牛油同幾條百里香,繼續煎佢
As salmon contains fat, upon searing the oil inside will be released. This is the time to add a handful of butter and thyme

見到一邊煎得差唔多熟,就可以翻去另一邊煎埋佢。有時食三文魚我地都唔鍾意煮太熟,所以見到外層輕輕轉色就停,咁樣外層食落唔會鞋,內層亦會保持嫩滑
When it’s done on one side, we can flip to the other side. For salmon we like it a bit rare so we stopped just when the exterior changed in color. In that manner, we can keep the inside still succulent and tender

另一方面,講埋今次個南瓜蓉先,先將南瓜籽清理好,切塊拎去蒸20分鐘左右令佢變腍
On the other hand, let’s talk about the mashed pumpkin. Take out the seeds first and then chop it into pieces and steam for 20 mins

然後就可以連埋2-3湯匙左右大細既牛油,用攪拌機將佢地攪勻
Then we can blend it together with 2-3 tbsp of butter

攪到佢變到綿滑就可以。今次無加到牛奶試下有無分別,結果係幾大分別的,有落牛奶口感同味道都會好d
Blend until it becomes smooth. We deliberately tried making this without adding milk this time. The result was… not satisfactory lol It’s better to add some milk to make richer flavor and texture

食之前再落少少檸檬汁,增加清爽感覺
Squeeze some lemon juice on top before eating to enhance freshness of the salmon
