腐乳雞翼依個組合聽上去唔覺得夾,用無水蒸既方法烹調聽落就更奇怪,不過唔試過唔知,原來出奇咁好食,用黎撈飯更係一流!

Fermented bean curd doesn’t sound like a perfect match with chicken wings but it indeed is! Together with the method of waterless steaming, this dish is just unbelievably delicious. This rice killer dish will make your bowl of rice gone in seconds!

無水蒸腐乳雞翼 Waterless Steamed Chicken Wings with Fermented Bean Curd

腐乳既淡淡咸香味同雞翼出奇咁夾,而用無水蒸既方法煮雞翼亦可以保留肉汁,咬落去有肉汁爆出,非常好食。

講開無水蒸,或者依個方法聽上去都幾陌生。同隔水蒸唔同,佢唔係靠煲入面水既熱力整熟食材,而係直接將成煲食材放上爐煮,用食材加熱後既熱力直接煮熟食物。咁樣煮法一定要好好控制開火既時間,如果唔係好易痴底,但咁煮法可以更大程度保持到食材既水份,食落質感會更飽滿同鮮味。

用無水蒸既方法,本身個煲保溫能力同鎖水能力都要夠強,用Le Creuset既buffet就岩晒。

The light and savory flavor of fermented bean curd works amazingly well with chicken wings. The method of waterless steaming helps the chicken wings remain succulent. It’s divine.

Speaking of waterless steaming, it may sound unfamiliar to many. Different from normal steaming, in waterless steaming there is no external water to cook the food. Instead, we put the pot directly on the stove and it’s the heat in ingredients that cooks the food. With this method, the timing of exposing to fire needs to be precisely controlled otherwise the ingredients will stock onto the pot. The advantage of using this method is that the juice inside the ingredients can be better reserved and hence both the texture and taste are better.

To use waterless steaming, the pot itself needs to be good at heat insulation and preserving water inside. The Le Creuset buffet we used is ideal for this cooking method.

先將急凍雞翼浸水解凍
解凍後可用粗鹽擦一擦雞翼再沖去,可有解雪味同提鮮作用,之後亦可用力擠出雞翼骨中間既血水,d血通常有陣雪味

To begin with we immerse the frozen chicken wings in water for defrosting.
After that we can use crude salt to rub and wings and then wash it away. This can help revitalize the flesh. Then we can squeeze the wings to let out the remaining blood in the joint because the blood is usually stinky.

輕輕拭乾雞翼上既水
Towel dry the water on skin

調腐乳醬:腐乳4磚、蒜蓉、紹酒1湯匙、糖1茶匙、1茶匙豆瓣醬同埋1茶匙生粉
Prepare the sauce: 4 cubes of fermented bean curd, minced garlic, 1 tbsp of shaoxing wine, 1 tsp of sugar, 1 tsp of chill bean sauce and 1 tsp of cornstarch

用醬撈埋雞翼,醃半個鐘
Marinate the chicken wings with the sauce for 30mins

落鑊
Put the wings on buffet

鋪靚之後,冚蓋中火蒸4分鐘,轉細火4分鐘,再熄火焗6分鐘,完成!
Then we close the lid, cook it on medium heat for 4 mins, switch to low heat for 4 mins and then let it rest for 6 mins, done!
