相傳鄧肇堅爵士好鍾意去西苑酒家飲茶,仲鍾意去之前叫家僕先拎湯料去酒家,叫個邊煲定個老火湯先,而湯料入面除左有老雞螺頭個d基本野,仲梗會有聽落唔太搭八既蜜瓜,由於有種大家都有興趣揭開佢面紗既神秘感,西苑後來直程係菜單推出埋爵士湯,時至今日都係酒家一個受歡迎既湯水。
關於爵士湯既典故同做法都有唔同版本,但我地最關心既係,蜜瓜煲湯係咩玩法?煲出黎係咩味道?今次就分享下我地既發現。先係度劇透:好好飲,好值得試!
There was a story about Sir Shiu-kin Tang, one of the tycoons in the old Hong Kong. It said that he loved going to the West Villa Restaurant and before his visit, he would ask his maids to deliver soup ingredients to the restaurant so when he arrived he could enjoy the soup immediately. Apart from ordinary ingredients, one of the ingredients he loved adding was honeydew melon. As it’s not a common thing to make soup with melon, when the restaurant listed this soup on the menu, it became a popular soup among curious customers.
There are various versions of the story and its recipe. But what concerned us most is: making soup by HONEYDEW MELON? What is it like? In this article we are going to share our experience and here comes the spoiler: it’s super delicious and we recommend you to try!
花膠爵士湯 Sir’s Deluxe Soup

爵士湯基本上都係d老火湯既基本料,但就係煲湯既最後半個鐘加入埋蜜瓜
蜜瓜同老火湯既味道相當夾,成個湯有種清新既幽香,而且有種果甜味,大人細路都會鍾意飲
而d瓜煲完左之後會融入晒個湯,淨低只有瓜皮部份,食落味道有d似合掌瓜
我地炒左個牛河配依個湯lol
The majority of the ingredients are ordinary except adding honeydew melon in the last 30 mins
Honeydew melon goes so well with the soup. It has a fresh fragrance of melon and some fruity sweetness which is definitely loved by young or senior.
We also made stir-fried rice noodles with beef to go with the soup

材料有蜜瓜半個、雞一隻、豬骨、螺頭4隻(已浸泡一晚)、花膠一條(已發起)
仲有一d我地純粹想清左存貨既料:瑤柱、果皮同猴頭菇
Ingredients include half a honeydew melon, a chicken, pork bones, dried whelk head (soaked overnight), a dried fish maw (soaked)
Also some optional ingredients: dried scallops, dried tangerine peel and lion’s mane. We used them just for clearing stock in our home

Regarding preparing dried fish maw before using it, you may refer to our previous cooking record of dried fish maw with milk

做下d事前功夫,將螺頭切片,浸一浸瑤柱、果皮同猴頭菇
Slice the whelk, soak the dried scallops, tangerine peel and lion’s mane

浸開左既果皮要刮囊,基本動作
We need to peel off the inner skin of tangerine peel before use

將湯料連幾片薑放入湯煲
Put the ingredients in a stock pot together with slices of ginger

我地同雞同豬骨跑活水。將佢地放入凍水,開細火
Put the chicken and pork bones in cold water, switch on low heat

煲煲下d肉沫呀油呀就會跑出黎
After awhile scum emerges

洗返乾淨d料
Wash away the scum

將雞同豬骨都加入湯煲,加滿水,中大火煲佢半個鐘先,好快個湯就會變到白色
Put the chick and pork bones and also water in the stock pot. Boil under medium high heat for half an hour

細火再煲佢2個鐘
Switch to low heat for 2 hours

依個時候可以將蜜瓜批皮,切塊
We can now peel of the skin of the honeydew melon and chop it into pieces

煲左2個半鐘既湯d油都浮晒上面,我地撇一撇油
Filter away the oil on the surface after 2.5 hours of cooking

然後就加入蜜瓜花膠,煲多佢半個鐘
其實花膠應該剪開方便食,我地咁樣原條上純粹為打卡霸氣d lol
Add the melon and dried fish maw and cook it for hour and hour more
Actually we should have cut the fish maw into pieces for easier eating. We left it intact for taking fancier photos lol

加鹽調味就完成喇!
Salt the soup and done!
