以為小夫妻發左達所以煮花膠雞煲翅慶祝?其實我地煮既係雞煲素翅,仲要因為豬肉價格居高不下,連瘦肉都無買到,只係幾十蚊買隻雞,上hktv買包素翅,加埋少少金華火腿同娘家拎返黎既花膠,就煮左依個花膠雞煲翅。無乜好名貴既食材,不過我地就用小小既技巧去煮到雞煲翅超香濃,今篇就介紹下點煮!

You might think that we have just get rich so we made this luxurious Braised Shark Fin in Chicken Broth with Fish Maw to celebrate? Actually we were using imitate shark fin. Plus the pork price was too high recently so we didn’t add pork in. Without luxurious ingredients, we tried to use our little trick to compensate and made this soup extra creamy and aromatic. Take a look at how we made that!
BTW, please get rid of eating real shark fin even you have get rich.
花膠雞煲翅 Braised Shark Fin in Chicken Broth with Fish Maw

舀起既啖啖都係花膠同素翅,而雞湯底超濃郁美味,正!
A mouthful of fish maw and imitate shark fin in super thick and creamy

飲完一碗又一碗,依個湯用黎過時過節招呼朋友真係唔會失禮
Just couldn’t stop eating that… This soup is ideal for treating family and friends in a festive meal

材料有半隻雞、素翅數量隨意、花膠一條(已發起)、金華火腿隨意
其實都應該加埋瘦肉令佢多d肉香,不過豬貴,無買到lol
Ingredients include half a chicken, some imitate shark fin, a piece of fish maw (processed) and some Jinhua ham.
We were supposed to also add some pork but it’s too expensive so we didn’t buy it lol

花膠先拎出浸佢一晚
Soak a piece of fish maw in water overnight

煲滾水,再將花膠、薑、蔥、少少紹酒放入,開火,冚蓋滾3分鐘,熄火,由佢焗至室溫,咁花膠就叫發好左了
Put the fish maw together with some ginger, scallions, some Shaoxin wine into a pot of boiling water. Switch on low heat to cook it for 3 mins with lid covered. Switch off fire, let it cool down. This is how we “process” the fish maw

雞跑活水,即係放入凍水,開細火,由佢煲至水滾,用以去除肉沫
Put the chicken into a pot of water in room temperature. Low heat on until it comes to boil. This is help remove the scum

將雞同金華火腿放入鍋,加2公升水,冚蓋,細火煲2個鐘
Put the chicken and Jinhua ham into pot. Add 2L of water, cover the lid and cook for 2 hours on low heat

煲完出黎係咁,色水唔太濃郁
This is how it looked after 2 hours. Didn’t look creamy

我地開始用秘技將佢變得濃厚了。將湯料拎出黎,晾乾水
So we now play out trick to make it nice and creamy. Take out the ingredients and drain the water out

放到炒鍋,唔加任何油,中火乾燒佢
Put the ingredients in a frying pan. Add no oil and switch on medium heat

炒15分鐘令湯料變得乾身同散開
Cook for 15 mins to make dry and mash the ingredients

再撞入剛才煲起既湯,煲10分鐘
Pour the soup in. Cook for 10 mins

然後個湯會明顯地濃厚左奶白左,依個就係煲得好飲既秘訣
Now the soup turns much more creamier. This is the trick to make this soup delicious

撈返起所有湯渣
Take out the ingredients again. Now we are not going to use them again

轉返落湯煲,加入花膠
Transfer the soup into a stock pot. Add the fish maw

細火煮多半個鐘
Cook on low heat for 30mins

然後隔走湯面既雞油,加入沖洗好既素翅,煮返滾佢就完成喇!
Remove the oil floating on the soup. Then add the rinsed imitate shark fin. Boil it again. Done!
