You might think that we have just get rich so we made this luxurious Braised Shark Fin in Chicken Broth with Fish Maw to celebrate? Actually we were using imitate shark fin. Plus the pork price was too high recently so we didn’t add pork in. Without luxurious ingredients, we tried to use our little trick to compensate and made this soup extra creamy and aromatic. Take a look at how we made that!

花膠雞煲翅 Braised Shark Fin in Chicken Broth with Fish Maw
A mouthful of fish maw and imitate shark fin in super thick and creamy
Just couldn’t stop eating that… This soup is ideal for treating family and friends in a festive meal
Ingredients include half a chicken, some imitate shark fin, a piece of fish maw (processed) and some Jinhua ham.
We were supposed to also add some pork but it’s too expensive so we didn’t buy it lol
Soak a piece of fish maw in water overnight
Put the fish maw together with some ginger, scallions, some Shaoxin wine into a pot of boiling water. Switch on low heat to cook it for 3 mins with lid covered. Switch off fire, let it cool down. This is how we “process” the fish maw
Put the chicken into a pot of water in room temperature. Low heat on until it comes to boil. This is help remove the scum
Put the chicken and Jinhua ham into pot. Add 2L of water, cover the lid and cook for 2 hours on low heat
This is how it looked after 2 hours. Didn’t look creamy
So we now play out trick to make it nice and creamy. Take out the ingredients and drain the water out
Put the ingredients in a frying pan. Add no oil and switch on medium heat
Cook for 15 mins to make dry and mash the ingredients
Pour the soup in. Cook for 10 mins
Now the soup turns much more creamier. This is the trick to make this soup delicious
Take out the ingredients again. Now we are not going to use them again
Transfer the soup into a stock pot. Add the fish maw
Cook on low heat for 30mins
Remove the oil floating on the soup. Then add the rinsed imitate shark fin. Boil it again. Done!
