行過街市見到蝦既種類林林種種,咁岩見到姨姨拆緊箱冰住既中蝦,一份$25,買多包粉絲,一個餸唔洗$30,抵玩, d蝦食落又好新鮮,結實鮮甜。依味蒜蓉粉絲無水蒸蝦真係快靚正之選!

Walked through the wet market, there were lots of species of prawns. We happened to find some middle prawns just being unboxed and they looked really fresh, HK$25 for a full plate of them! Together with a pack of glass noodles, this dish cost less than HK$30! It’s easy to make, cheap and satisfying!

蒜蓉粉絲無水蒸蝦

材料簡單,蝦夠新鮮既話依個餸已經成功左大半,
吸收晒汁料既粉絲亦係精粹

Ingredients are very simple. There’s not much chance to fail if the prawns are fresh.
The glass noodles were very tasty as they absorbed all the prawns’ unami

蝦剪去觸鬚、刺同腳,再沿蝦身剪開殼,切開邊,摵走蝦腸再洗淨。
粉絲浸軟後鋪起煲面,落兩湯匙水,再將蝦擺係上面。

Chop off the antenna, stings and legs of the prawns and then butterfly and devein them.
Soften glass noodles by immersing in water. Put them on the pan. Add 2 tsp of water. Then place the prawns on top.

調味料:蒜蓉(炸起一半做金銀蒜效果更好)、辣椒、鹽半茶匙、味醂一湯匙、胡椒粉少少溝起鋪係蝦面。
冚蓋開中火煮3分鐘,轉細火2分鐘,熄火焗5分鐘,完成。

Seasoning: minced garlic (to have better flavour we can fry half of the garlic), chilli pepper, half tsp of salt, 1 tbsp of mirin, a little bit of pepper powder.
To cook, we put the pot on medium heat for 3 mins with the lid closed, switch to low heat for 2 mins, and then switch off fire and let it rest for 5 mins. Done!
