今次我地係用自己整嘅醃料,如果用現成嘅蒜蓉豆豉醬件事就更加快完成!

This time, we used our homemade marinade, but using store-bought sauce will make the process even quicker and easier.

蒜蓉豆豉蒸排骨 Steamed Pork Ribs with Garlic & Fermented Black Beans

蒜蓉豆豉蒸排骨係極之家常嘅小菜,基本上每個下過廚嘅香港人都一定煮過呢道菜, 今次我哋就分享我哋平時係點樣用好快好簡單嘅方法去完成蒜蓉豆豉蒸排骨!

This is a classic home-cooked dish that almost every Hong Kong person who has cooked has made. This time, we will share with you our quick and easy method for making this dish at home!

材料有排骨300g,我地認為飛排係最好食的
材料有豆豉 3茶匙 (用湯匙壓碎),蒜蓉 2茶匙,指天椒 1隻(切粒)

Ingredients include pork ribs 300g
Also fermented black beans 3tsp (mashed with tablespoon), garlic 2tsp, chilli pepper 1pc(sliced)

排骨先用水浸15分鐘後再沖洗乾淨,去除腥味。

Immerse pork ribs in water for 15mins and wash it thoroughly to remove the stinky flavour of blood

印乾水份後用1湯匙生粉拌勻醃5分鐘令肉質更鬆軟。

Whip dry the pork ribs and mix with 1tbsp of cornstarch to marinate for 15mins to tenderize the meat

準備醃料:生抽 2茶匙、蠔油 2茶匙、糖 1/2茶匙、胡椒粉 1/2茶匙、紹酒 2茶匙、麻油 1/2茶匙、油 1茶匙

Prepare the marinade: light soy sauce 2tsp, oyster sauce 2tsp, sugar 1/2tsp, pepper 1/2tsp, Shaoxine wine 1tsp, sesame oil 1/2tsp, veggie oil 1tsp

加入所有醃料,醃最少15分鐘。

Mix well with the marinade and rest for 15mins.

將排骨平鋪於碟上

Spread the pork ribs on a plate evenly

然後大火蒸8-10分鐘就得

Steam on high heat for 8-10mins.

This Steamed Pork Ribs are even more delicious when served on top of a bed of Chan Chuen Rice Noodles, which absorb all the juices. We’ve shared this on Instagram before.
