法式龍蝦湯聽就聽得多,不過又有幾多人真係會咁大投資買隻龍蝦返黎煲湯?其實係街市平平地買份中蝦,用類似既煮法,都可以煮出蝦既鮮甜味,中蝦濃湯同龍蝦湯比,幾可亂真架。

We all heard about French lobster bisque but for home cooking, how many of us would really spend a fortune to buy lobsters for making the bisque?Actually we can use the affordable middle prawns as alternative to make a prawn bisque and it tastes alike the high end lobster bisque!

蝦經牛油煎過,香口結實
Prawns were fried with butter so they’re rich and crunchy

街市成日有既中蝦,買左兩份$40,抵玩
We bought 2 dishes of middle prawns from wet market. It’s just HK$40, what a good deal!

材料:中蝦10幾隻、蕃茄、甘荀、洋蔥、唐芹同番茜
Ingredients: 10+ medium prawns, tomato, carrot, onion, Chinese celery and parsley

先將中蝦剝殼
Take off the shells from the prawns first

切好配料
Chop all the other ingredients

開火落油,洋蔥落鑊細火煎至半透明
Pour oil into a pan and heat it with low heat. Add the onion and cook until it turns translucent

將蕃茄、甘荀同唐芹都落鑊
Throw tomato, carrot and Chinese celery in

配料炒香後撈起
Set the stir-fried ingredients in bowl

煎香蝦殼
Saute the prawn shells

放適量茄汁調味
Flavour the shells with ketchup

煎到蝦殼有香氣,落滾水略煮蝦殼
When the shells are aromatic, pour boiled water in and briefly simmer

準備好所有配料
Get all ingredients ready

放埋一齊之後,加500ml魚湯,中火滾起後轉細火煲一個鐘
After putting all ingredients together, pour 500ml of fish stock. Switch on middle heat until boiled and then turn to low heat to simmer for an hour

依個時候落牛油煎香蝦肉
Meanwhile, saute the prawn with butter

煲好湯底後,將所有配料撈出
After an hour, take out all ingredients

依個時候色水已經好似樣,但佢仲係好稀的
The colour is there but the body is still thin

麵粉開水,將湯調至濃稠質地
We can thicken the soup with a mixture of flour and water

最後放埋d蝦落湯,返滾起加鹽調味就得喇
D蝦灘凍既時候會有d蝦油晾出,好香口的,唔好浪費,放埋落湯
Lastly, add the fried prawns back to the soup. Boil it and season it with salt
Don’t miss the oil dripped from the prawns, it’s very aromatic!
