薑蔥油鹽無水蒸蝦 Waterless Steamed Prawns with Ginger and Scallion

望落同白灼蝦一樣平平無奇,但用左薑蔥油鹽黎調味,配以蝦本身既鮮味,非常好食!
梵高聞到都即係走上黎餐台,無得食都黎了解下
Looks exactly the same as boiled prawns but with the seasoning of ginger, scallion, salt and olive oil, the umami of prawns can be further brought out
Though Vincent cannot eat seasoned prawns, he was very curious about them

係街市買左半斤游水海蝦
We brought 300g of fresh sea prawns from wet market

準備薑片,蔥段,鍾意既加少少蒜頭都無所謂
Prepare ginger slices, scallions and it’s optional to add some garlic as well

鋪晒係煲上面
Place them in the bottom

放好海蝦
Put the prawns on top of the ingredients

灑上適量岩鹽,然後我地再係蝦上噴上初榨橄欖油
Add some rock salt and spray some extra virgin olive oil on top

然後冚蓋,開始無水蒸。
中火3分鐘,細火2分鐘,再熄火焗5分鐘。
Close the lid, begin waterless steaming
Medium heat for 3 mins, low heat for 2 mins and then heat off, let it rest for 5 mins

完成!
Done!

薑蔥油鹽同蝦味好夾,食完一隻又一隻
The seasoning went perfect with the prawns and it’s finger-licking good

順便另外烚左兩隻蝦俾小朋友食
We also boiled 2 prawns for our kids
不過小朋友唔欣賞:o)…
But they just didn’t appreciate that…
