如果生蠔似牛肉剌身,蠔豉似牛肉乾,我諗金蠔就似熟成牛扒。

金蠔肉質飽滿,咬落有汁,最重要係經過曬製後,味道更濃縮集中,食落蠔味非常濃郁,配上香甜既蜜糖汁,絕對令人食唔停口,而食完會個種齒頰留香,亦令人相當難忘。

If raw oysters are like sliced beef sashimi and dried oysters are like beef jerky, then gold oysters are like well-aged steaks. The meat is full and juicy, and the flavor is concentrated and rich after being sun-dried. The sweet honey glaze adds an extra layer of flavor that will have you coming back for more. The aftertaste is also quite memorable, leaving a pleasant fragrance in your mouth.

This time we bought an extra large version of gold oysters from Kong Wing.

隻隻都差唔多有成罐汽水咁高!

Each oyster is almost as high as a can of coke!

未食既金蠔要放入冰格保存

Before eating, the oysters should be stored in the freezer.

食之前一晚拎出室溫解凍

曬完都咁大隻,忍唔住再拎包飲品對比下個size lol

Take it out and thaw it at room temperature the night before eating.

解凍後,將竹籤小心抽出,再沖洗一下金蠔

After thawing, carefully remove the bamboo skewer and rinse the oysters.

放係蒸碟,鋪上薑絲

Put on a steaming plate and spread some ginger on top.

蒸5分鐘

Steam for 5 minutes

拎出黎索乾水

Take it out and whip dry the water.

準備一湯匙蜜糖,蒸過蠔既水都可以倒入,溝成醬汁

Prepare a tablespoon of honey and add the water from steaming the oysters to make a sauce.

中火將油燒熱,將金蠔放入鍋,轉細火,全程都要俾耐性慢慢煎

Heat the oil in a pan over medium heat and put the oysters in. Turn the heat to low and slowly fry with patience throughout the process.

煎一分鐘左右就會煎出香脆表面,反轉再煎

要用隻不沾力強既鍋,如果唔係煎爛左蠔就會好心痛/_\

After frying for about a minute, a crispy surface will be fried out. Flip it over and fry again.

Use a non-stick pan, otherwise you will be very heartbreaking if it gets burnt.

加入蜜糖醬汁

Add the honey sauce

等待收汁後就完成喇!

wait for the sauce to thicken, then it’s done!
