唔太正宗但好好食的西班牙海鮮飯 Spanish Paella in Our Own Way

西班牙海鮮飯望落就令人感覺開心,而Paella個字本身係解煮飯用大大既淺鐵鍋,依個西班牙大鑊飯本身就係設計出黎俾大家互相分享,所以用黎宴客非常適合!

Paella做法有非常多種,我地今次既版本都係儘量用香港容易買到既材料,用相對簡單既土炮方法炮製。

Spanish Paella is festive. The word Paella itself means the huge shallow pan used in making the rice. The dish Paella is designed for sharing so it is a perfect dish to treat your guests.

There are numerous ways to make Paella. The version we have this time uses ingredients easily been found in Hong Kong and we also make this in a relatively simple manner.

The colorful Paella just reminds us of joyful memory in Spain, like performers in the street of Madrid who made people laugh, fancy and spectacular architecture in Barcelona and good time spent in having tapas and sangria… Sorry for being off topic

Before eating, squeezing some lemon juice on top is a must. The lively flavour is just beyond compare!

This is what we meant by “Performer in the street of Madrid who made people laugh”. Brilliant isn’t it?

仲有係西班牙酒吧買飲品會送tapas既傳統,真係諗下都開心。好啦真係唔扯咁遠喇,返返去煮野食。

The tradition of having free tapas upon buying a drink is also amazing. Really good memory in Spain. Ok too much off-topic. Let’s go back to our kitchen.

材料有200g米,我地用既係意大利米,質感同西班牙米都差唔多,唔好走去用珍珠米/絲苗就ok了

然後有隨意海鮮,我地用左大蝦、青口、貝柱

仲有香腸、洋蔥、檸檬、蒜頭、紅椒粉、茄膏、白酒

Ingredients include 200g of rice. We used Italian rice which has similar texture as Spanish rice. It’s fine as long as you’re not using Jasmine Rice/ Pearl Rice

Then some seafood you like. We chose tiger prawns, mussels and small scallops

And some sausages, onion, lemon, garlic, red pepper powder, tomato paste and white wine

剪出蝦頭,中火煎香

Take out the prawn heads. Sear on medium heat

加入半個洋蔥(切粒),繼續煎

A half an onion (diced). Continue searing

洋蔥煮軟後加入100ml白酒

When onion is softened, add 100ml of white wine

再倒入1公升水煮滾

Then pour 1L of water in and boil it

依個時候可以淥熟青口,青口陣間唔會入焗爐,依家淥熟左最後就會直接鋪上飯面

During this time we can boil the mussels. We won’t be putting them in oven in later step. When it’s cooked now we will place it on top of the rice directly during plating

將湯繼續用細火煮,煮30分鐘左右令佢得返約300ml

Continue to boil the soup on low heat for around 30 min to condense it into 300ml

隔返所有渣

Take of the scum

香腸切粒,煎香

Sauteed the diced sausage.

加茄膏半湯匙同紅椒粉1湯匙炒香,加200g米兜勻

Add 0.5 tbsp of tomato paste and 1 tbsp of red pepper powder and when it becomes aromatic, add 200g of rice

加入頭先淆起既湯,用鹽同胡椒調味,細火煮到湯汁開始收乾

Add the soup we have just prepared. Season with salt and pepper. Simmer on low heat until the soup turns drier and thick

鋪上青口以外既海鮮

Put seafood (except mussels) on top

預熱180度,焗25分鐘再鋪返靚晒d海鮮就完成

Preheat the oven to 180°C, bake it 25mins and then plate it. Done!

有時一個人食,都會用頹飯既方法去整Paella,連魚蛋都放埋落去煮lol
不過Paella既精髓一定係同人分享,所以唔太建議自己煮自己食haha

This is another version we made for eating alone. A not-recommended way of making Paella as it is meant to be a dish to share with our loved ones hahaha
