簡易家常辣酒花螺 Easy Sea Snails in Spicy Wine

要數到我最喜愛的家庭麻辣菜式,辣酒乜乜乜一定係首選,食落口有酒香又有少少甜味,配搭埋海鮮既鮮味,非常開胃,而且好容易煮。依個辣酒汁配搭蜆或蝦都得,我地仲試過辣酒煮蠔仔,用黎送飯簡直一流!

今次先介紹比較大路既辣酒花螺,下次就試下煮啦,無介紹錯架!

Speaking of our favorite spicy homemade dishes, the spicy wine series is for sure on the list. It makes food so appetizing in this sweet and winey sauce. This sauce goes well with seafoods like clams and shrimps. We even used that for cooking baby oysters which is a rice-killing dish.

In this article we are introducing Sea Snails in Spicy Wine, which is a fairly common combination with the spicy wine sauce. Try that next time!

街市買螺比較common會見到東風螺同花螺,今次買既花螺係較細粒,食落肉質較嫩滑同鮮味,簡單黎講就係好食d,當然價錢都貴d,今次兩個人食買左半斤,60蚊

The sea snails we used was babylon shell. For babylon shell, there are actually 2 species of it. One is called babylonia lutosa and the other is called babylonia areolata.

We bought babylonia areolata this time which is smaller in size, more tender and having a better taste. We bought 300g of it for HK$60

除左半斤花螺,材料仲有蔥、蒜(3瓣)、乾蔥1粒、薑一片、辣椒乾幾條、花椒1湯匙、八角2粒、豆瓣醬、雞湯、蠔油、紹興

Apart from 300g of sea snails, ingredients also include green onion, garlic (3 cloves), a shallot, a slice of ginger, dried chilli pepper, a tbsp of Sichuan peppercorn, 2 pieces of star anise, chilli bean sauce, chicken stock, oyster sauce and Shaoxine wine

備料先,花螺略略沖洗後,用鹽水浸一個鐘,咁樣可以有助浸走螺上既潺
切蔥花,剩下部份切段
拍薑拍蒜
沖一沖花椒八角辣椒乾

Get the ingredients prepared. After rinsing the sea snails, soak them in salt water for an hour to remove the secretion
Chop the green onion like as shown
Crush the ginger and garlic
Rinse the Sichuan peppercorn and star anise,

花螺汆水,煮佢3分鐘左右

Boil the sea snails in hot water for 3 mins

就算沖完浸完,汆水後仍然有浮沫浸到出黎
撈起花螺備用

After the boil some scum from the sea snails is out
set the sea snails aside

開始煮辣酒花螺!花椒八角細火白鑊烘至出味

Put the Sichuan peppercorn and star anise into a pot and heat them until aromatic

加油,然後加蔥薑蒜爆香

Add oil, and then green onion, ginger and garlic. Cook until aromatic

加入一茶匙豆瓣醬爆一爆香,再加少少蠔油

Add a tsp of chilli bean sauce then some oyster sauce

加100ml左右既紹興,然後加適量雞湯

Add 100ml of Shaoxine wine then some chicken stock

加半茶匙糖,然後由於醬料份量都唔太精準,所以都要係依個時候試味同調味

Add half a tsp of sugar. Test and adjust the taste of the sauce

加入花螺,煮多3分鐘

Add the sea snails and cook for 3 mins

加入埋辣椒乾就得喇
由於放辣椒乾都係主要為裝飾,所以唔太洗煮到佢出味

Add the dried chilli pepper and it’s done!
