而我地亦有一個私心想煲依個湯既原因,就係舊時中學既附近有間餃子店係專門用野葛菜生魚湯黎做餃子既湯底,佢個湯非比尋常地好味,我地都想係屋企自製返個種美味!

Earlier we a friend of us asked us for recommendation of healthy soup recipe for his ill family member. After some research, we came to realize that this Fieldcress And Blotched Snakehead Soup is good for easing pain and swell and… We don’t actually know much about Chinese medicine.. In short seems that this soup is good for health.

We also had a private reason for selecting this soup because it used to the soup we liked to order in a dumpling restaurant during our studyhood. This was the soup for serving the dumpling and it’s exceptionally delicious. We wanted to replicate the flavour at home so we chose this soup.

野葛菜生魚湯 Fieldcress and Blotched Snakehead Soup

成功地將野葛菜生魚湯煲得濃濃白白,飲落去亦都幾好飲,不過同餃子店個種非比尋常既甘醇鮮美有距離,值得研究點樣可以煲出個個味道,今次就當係分享住基本既養生湯水煲法先!

We succeeded in making a milky pot of Fieldcress And Blotched Snakehead Soup and it tasted good. But the quality was still not comparable to the version in the dumpling restaurant. We would love to explore how we can further improve this soup. Let’s treat this recipe as a basic version.

材料有野葛菜半磅、生魚、豬骨、蜜棗2粒、果皮2塊、薑

野葛菜係街市既草藥鋪有得賣,每磅$30左右

Ingredients include half a pound of fieldcress, a blotched snakehead, pork bone, 2 candied dates, tangerine peel 2 pieces and ginger

We bought fieldcress at Chinese herb shop at wet market. $30 for a pound

野葛菜先切走根

chop off the root of fieldcress

再洗淨。佢好多沙,要洗幾次先可以徹底洗淨

Wash the fieldcress thoroughly. It’s normally with lots of dirt so we need to wash it for multiple times

豬骨跑活水

Put pork bone into tap water and boil it

果皮浸開,刮囊

Soak the tangerine peel in water and peel off the inner skin

將豬骨、果皮、蜜棗放入煲

Add pork bone, tangerine peel and candied dates into pot

放入野葛菜,加水,中火煲滾佢

Add fieldcress and water. Medium heat on

生魚要洗乾淨,基本上見到紅色既地方都要洗走佢

Wash the fish thoroughly. Basically we don’t want to see anything in red

洗到咁樣就差唔多喇

Like this

生魚好多潺,要用滾水拖一拖

This type of fish is full of body secretion. We can remove that in boiling water

再用刀刮一刮,就可以清走身上既潺了

Then further peel off the secretion with a table knife

抹乾魚身

Wipe dry the body

爆起幾塊薑,再放魚落鑊煎香兩邊

Fried a few slices of ginger and then the fish

放魚入湯,繼續中火滾半個鐘

Fish in the soup. Medium heat on for half an hour

煲左半個鐘個湯已經變得香濃

This was how it looked after half an hour

轉細火煲多1個鐘就完成喇!

Switch to low heat for another 1 hour and it’s done!
