我地之前都介紹過係屋企整乾炒牛河既方法,不過個次就係用熟鐵鑊同埋炒勺去整,唔係個個屋企都有ed廚具,所以今次就試下用新入手既Vermicular鑄鐵平底鍋去炒,仲可以連鍋咁上碟,延長保溫時間,一路都食到暖笠笠既牛河!
依篇都會講講琺瑯平底鍋既清洗方法。
Previously we have introduced the way to make Stirred Fried Rice Noodles with Beef. But that time we were using traditional Chinese cookware to make that. Not everyone has such cookware at home. This time, we used our new Vermicular frying pan to make it. We can serve with the frying pan which can keep the noodles warm.
鑄鐵鍋乾炒牛河 Cast Iron Pan Fried Rice Noodles with Beef

乾炒牛河連鐵鍋上碟,牛河更保溫,賣相亦更靚
Serve together with the frying pan. Not only can it keep the noodles warm, it also looks good

乾炒牛河材料:炒河1斤(唔好洗啊)、牛柳份量隨意(用生抽、老抽、蠔油、麻油、紹油、生粉醃10分鐘)、洋蔥半個、芽菜、韮黃、薑米、蔥花
醬汁就係用左生抽、老抽、蠔油、味醂、紹酒同水混和而成,溝完試下係咪岩味
Ingredients: 600g of rice noodles (don’t wash), beef (marinated by light soy sauce, dark soy sauce, oyster sauce, sesame oil, Shaoxine wine, cornstarch for 10 mins), half an onion, bean sprouts, yellow chives, minced ginger and scallions
The sauced was made by light soy sauce, dark soy sauce, oyster sauce, mirin, Shaoxine wine and water. Test the taste after mixing it

中大火燒熱鍋,加油,再放牛柳略略炒香,拎返起
Switch to high-medium heat, add oil, then add the beef. Take it out after gently frying

撈起牛柳後加洋蔥同薑米炒香,全程用中大火
Then add onion and minced ginger until they become aromatic. Use High-medium heat all the way

加河粉煎香。說明書教炒易黏既食物時最好轉細火,咁先可以避免痴線,不過我地都無理咁多,照中大火落河粉,預左佢會痴,但想試下佢既傳熱力係咪真係咁勁,可以令乾炒牛河表面產生梅納效應既香甜感
Add rice noodles. Slightly sear to create rice’s aroma. The user manual said that we’d better turn to low heat when cooking food with high stickiness to prevent sticking to the pan. But we would like to try the heat conduction power of the pan so we just stayed at high-medium heat. If the pan is hot enough, the Maillard reaction will make the noodles extra delicious

Pour sauce in. We may divide it into a few times

熄火前,加韮黃。韮黃係食佢半生熟個種香甜,所以最後先落。炒返勻佢就完成乾炒牛河喇!
Before switching off the heat, add yellow chives. For yellow chives, we need it just half way done so it remains fresh and sweet. Stir well then we can serve

食前灑上蔥花。依個平底鍋既傳熱能力強,就咁燒熱個鍋30秒,加一匙水落去可以見到佢即刻蒸發晒(詳見我地開箱文),依個特性可以快速令食材表面變得乾脆,可以炒得出好好味既乾炒牛河!
Add some chopped scallions before eating. This frying pan has good heat conduction efficiency. If we preheat the pan for 30 secs and then add a spoon of water in, the water evaporate instantly (details can be referred to our unboxing article). This feature can make the food crispy on the outside so the Stirred Fried Rice Noodles with Beef can be made very delicious!

我地用既鍋係日本 Vermicular 琺瑯鑄鐵平底鍋 26 厘米,響我地網店都有得賣喇,除左夠晒靚可以直接上碟,佢既「瞬間蒸發水份」級既傳熱力仲非常犀利,可以煮到食物外面香脆內裏多汁!

琺瑯平底鍋清洗法 Way to Clean Enamelled Frying Pan

由於琺瑯質地既不黏沾特性唔及易潔鑊,個鍋預熱不足就會有痴底情況。痴到咁會唔會好難搞? 今次依個例子正好可以同大家分享埋依點
The non-sticky feature of an enamelled fry pan is not as strong as a teflon one. If the pan is not preheated sufficiently, food will stick like this. Is it hard to make it clean again? We would like to take this as an example to share the way to clean it.

將滾水倒入鍋,由佢浸一陣
Pour boiling water in and put it aside

煲左熱水,順便就手沖個咖啡,今次係香港Knockbox炒既肯亞豆,有黑加倫子同木瓜風味
We have boiling water, why not also make a cup of pour over coffee? This time we had beans from Kenya roasted by Knockbox. It has flavours of black currants and papaya

手沖咖啡最佳品味時間係一沖起個下開始,稍為暖左會飲到唔同既風味,而攤涼左就多數會酸,飲得多手沖咖啡,大概都會領略到咩叫活在當下
The best timing to drink pour over coffee is the time when it’s just made. When it becomes warm we may experience different flavours and when it cools down it normally turns sour. We can experience carpe diem while drinking pour over coffee

飲完咖啡可以返返去洗鍋。有得塗層既鍋都唔應該用硬物刮佢,所以一般都係用防刮百潔布,痴住既河粉好容易就可以除去
After the coffee we can go back to our sink to clean the pan. Any pan with coating shouldn’t be rubbed by hard objects. We should use non-scratch scrub sponge to remove the noodles. They should be removed fairly easy.

如果仲有頑固污漬,落d梳打粉,加熱水,開細火煲一陣,再重覆用防刮百潔布清潔,就可以清理晒所有污跡了
If there are still stains, apply some baking soda. Add boiling water and switch on low heat for awhile. Use non-scratch scrub sponge to clean it again and we can now clean all the stains.
