搵下搵下，發現原來用鑄鐵鍋都可以坎飯，平時個鍋又可以煮下湯，個外型又好睇，所以就買左個Le Creuset 18cm既round casserole黎當我地既飯煲。而後來又覺得佢有少少太大個，入手多個Vermicular 14cm鑄鐵鍋，兩個人開餐就岩岩好！
We threw away our rice cooker last year after we found out fleas were living in the inside of the lid of the rice cooker… The steam of rice accumulated in the lid made that a perfect habitat for the fleas… That’s really really gross every time I pictured the moment we discovered that.
Then we did some research and found that there are actually many ways to cook a bowl of rice. We tried to look for a better rice cooker but turned out that a nice one could be quite pricey. We heard that Japanese earthen pot is the perfect tool to make rice but that can only be bought in Japan. We also heard that people steam rice because there won’t be any rice cracker leftover and won’t cause wastage. However, you need more utensils to steam rice and the flavour is not as good.
We happened to find out that we could actually make rice by cast iron pot. We could also use it for other purposes like making soup and a cast iron pot is actually good looking. With these advantages, we eventually bought a Le Creuset 18cm round casserole to replace our rice cooker. Later, we thought that LC casserole is a bit too large and then we also bought a Vermicular 14cm round pot which is ideal for making rice for two!

鑄鐵鍋坎飯 Making Rice by Cast Iron Pot
To make a fluffy and rich in texture bowl of rice, there are plenty of areas we need to look into. We have chosen to make rice by a cast iron pot. Not only is it good looking and convenient to use, its abilities of heat insulation and water locking are also excellent. This makes the rice evenly heated and well moistened

Of course to make a nice bowl of rice we first need good quality rice. We usually buy Japanese pearl rice, especially Koshihikari from Niigata (´・ω・`)
Here it’s one rice cup of rice. This can make 2 bowls of rice.
Rinse the rice for 3 times and then immense in water for 15 mins
Pour away the water and then add back water of slightly more than one rice cup. Put them into a cast iron pot
Medium heat on, stir to prevent rice sticking on the pot
When it comes to boil like this, we can switch to low heat until the bubbles become smaller
Cover the lid. Cook it for 8 mins on low heat. Then we can switch off fire and leave it there, let it rest for 12 mins
Before serving, we need to stir the rice to let the vapour out. This can give a more fluffy texture to the rice

Cooking 2 cups of rice, the LC 18cm round casserole is a bit too large. We now use it only when people come to our place for dinner
