On of the happiest thing about having meal at a Korean restaurant is that there are always numerous side dishes. This Korean Spinach Side Dish is definitely one of our favorite. This side dish is actually easy to be made at home. Though we didn’t deliberately buy Korean ingredients to make the authentic version, we could still replicate 80% of the deliciousness with our local ingredients.
韓式涼拌菠菜 Korean Spinach Side Dish
Simple, tasty and healthy. Multiple portions can also to be pre-made for a few meals. This is a dish we highly recommend!
We bought 600g of spinach. This is the portion for 2 persons & 2 meals. This side dish is supposed to be in small portion but we just couldn’t help but ate a lot in each of the meals.
Trim and rinse the spinach. Usually there are quite a lot of dirt and soil on spinach, rinse thoroughly
Add spinach into a pot of boil water for 30 seconds. To prevent boiling water from dropping too much temperature, we may split the boiling process into a few times
Take out the spinach and drain the water
Squeeze out excessive water gently
Without excessive water, the spinach no longer looked like it has 600g
Now we can prepare the sauce. The essential ingredients are 2 tbsp of soy sauce, 3 cloves of garlic, some sugar and 3 tsp of sesame oil.
We like it with more flavors so we also added some miso, fish sauce and mirin.
We should call the dish “Spinach Side Dish Inspired by Korean” lol
After mixing the sauce, it’s important to test the taste and adjust until you find it tasty
Pour the sauce to the spinach and mix it
Put it into fridge for storage then we can have it for the next few meals
