上次我地上網睇左幾個食譜然後第一次試煲野葛菜生魚湯,味道尚可但就煲唔到餃子店個種令人一試難忘既香濃美味,今次我地用左我地之前用過既煲魚湯技巧,bingo,成功煲出超好味既野葛菜生魚湯!值得分享!
Last time we tried to make Fieldcress And Blotched Snakehead Soup after referring to a few online recipes. The taste was alright but it’s still far away from the version in a dumpling restaurant we used to go to. This time we tweaked the cooking method a bit using similar techniques in making fish stock and we succeeding in making a mouth watering bowl of soup!

野葛菜生魚湯有種難以形容既濃郁鮮味,今次成功煲到個種味道了!
基本既準備方法可以參考返上次既分享,今篇主要介紹點樣做可以煲得更好味
Fieldcress And Blotched Snakehead Soup has a version unique umami. We successfully brought it out in this version!
For the basic steps of making the soup you may refer to our previous sharing. In this article we mainly share the different steps we took

生魚要切塊
Chop the fish into pieces

落鑊煎時要壓碎魚肉,令魚肉同稍後落既水有更多接觸面積
Crush the fish while frying it to maxmize the contact area with water

灒少少紹酒提鮮
Add some Shaoxine wine

另一邊廂,野葛菜水要煲到大滾
On the other hand, bring the fieldcress soup to boil

魚蓉超熱,野葛菜水超熱,將野葛菜水倒落魚蓉再煲
While the fish and fieldcress soup are extremely hot, mix them together in the pan

中大火煲半個鐘,由於火較大,要小心睇火唔好俾佢乾水
Let it boil for half an hour on medium-high heat. Watch the fire to make sure there’s always some water left

煲完之後個魚湯明顯奶白香濃
It’s obviously milky and silky

倒返落煲野葛菜水度,細火煲多1個鐘,隔返渣就完成!
Pour the fish stock back to the fieldcress soup. Let it boil on low heat for another 1 hour. Filter all the ingredients away and it’s done!
