Speaking of salt baking we may imagine that there are loads of things to be prepared and it will be clumsy to make that at home. In contrary, it’s very easy to make. Yet there are some areas to look into if we want to make it good.
鹽焗奄仔蟹 Salt Baked Virgin Crabs
A virgin crab is literally a crab that has not engaged in intercourse. The character of it is the brown meat being tender and buttery which is ideal for salt baking. A salt baked crab tastes like a grilled one but with stronger savory flavour. Yummy!
Instead of having firm brown meat like a mud crab, a virgin crab has softer and silkier brown meat
We bought them at HK$50/ crab.
Rinse the crabs and most importantly flip their aprons and rinse the inside thoroughly as normally it’s quite dirty there
After that put them into a freezer for 10 mins to make them fainted
We bought 2 packs of crude salt from grocery store
Mix a handful of cumin powder and bay leaves with the salt and cook on medium heat
Just stir and cook it until it turns brown
Take the crabs out, remove the threads
Bed them upside down on the salt. Cover the bottom of the crabs with some salt as well
Close the lid, medium heat on for 5 mins, then switch to low heat for another 10 mins
A crab broke its leg during struggling… cry….
After discussing with friends, we came to realize that putting crabs in freezer isn’t really a reliable method. Next time we should simply put them in tap water for killing them before cooking
