In our last post we mentioned that the lobster had already passed away when we took them our from fridge so the texture was not as perfect as a living one. We don’t usually cook lobster but when we do, we want it the most fresh. Hence we looked into ways to keep a lobster fresh on the internet and we discovered that there are actually various ways of doing that. The below were some of the approached we came across:
1) Stab a chopstick through the lobster tail from the anus for releasing its “urine” and then put it into fridge
2) Keep the lobster alive in a pot of salted water until we cook it
3) Simply put it into fridge until cook So which method is right? Let’s continue reading.
龍蝦保鮮法 Ways to Keep a Lobster Fresh
Brief comments on the aforementioned ways to keep a lobster fresh:
1) Releasing “urine” and put it into fridge
First of all, the urine of a lobster is released from the excretory pores on the antennae and there is nothing to do with the anus. When we are actually stabbing through the intestine of the lobster with the chopstick. Inside the intestine there may be faeces but actually we will take out the intestine anyway before we cook. The transparent liquid pouring out when we stab the lobster is actually its blood which has no unpleasant odour. When it’s cooked it condenses like egg white. In the US there is also recently a research suggesting that lobster blood is potentially a cure for COVID 19…
In addition, the action of chopstick stabbing actually looks inhumane. Not sure if a lobster has feeling or not but it makes the lobster struggles. Also soon after being stabbed the lobster will die so it cannot be kept fresh anyway
2) Keep it fresh with salted water
That’s in no way an easy task. To keep the lobster alive, salinity will need to be within 28-35ppt . Also the temperature, oxygen level, nitrogen level and pH value are all need to be in control. If you’re not going to keep the lobster for a long long time, you better forget this method
3) Simply put it into fridge
That’s what we did this time but the lobster still died before cooking. Actually we should use wet towel to wrap the lobster and put it into the freezer to minimize its metabolic rate. The oxygen required by the lobster will hence decreases to lowest level and it can then be kept for longer. Looks like this is the simplest working way.
It doesn’t sound like a good idea to stab a chopstick in the anus…

After talking about how to keep it fresh, let’s talk about how to actually prepare the lobster. First we briefly rinse it
Grasp the head and tail, twist it in circle
We can then separate that into two parts
Trim the antennae
Separate the head into 2 parts
Take away the gills
Remove the legs
Chop the tail into 2 pieces

In another meal we bought 2 Australian lobsters for baking once after we arrived home with them. You may refer to our Cheesy Baked Lobster recipe.
The best way to get rid of a hyperactive lobster is to put it into freezer for 15mins. Then stab a pointed knife into the lower end of its head quickly and accurately. This is enough to stop it from having further motion.
Cut all the way down and separate the head
Now we can switch to use a pair of scissors. First trim off the antennae
Slowly cut the lobster into halves
Basically we just carefully cut the shell into halves. No fancy technique is involved. We may also trim the legs away during this process
After cutting the shell, we can use our knife to cut the meat and then the lobster is butterflied like this. Take out the intestine and done!
