煙燻三文魚、茶燻雞、滬式燻蛋等等煙燻食物大家都可能食唔少,但有無試過係屋企自己整?覺得好麻煩?其實用煙燻機非常方便!今次就分享我地整既煙燻醉三拼,入面有煙燻蛋、煙燻鮑魚同埋煙燻雞翼,全部都以花雕醉香汁浸泡過,醉香加上煙燻木香,最簡單既食材都變得超級特別同好食!

Smoked food like Smoked Salmon, Tea Smoked Chicken, Shanghainese Smoked Eggs may sound familiar to you but have you ever thought that it’s very easy to make them at home? We are sharing our experience of making smoked & drunken trio which includes eggs, abalones and chicken wings.
We will also introduce the Green House food smoker that we used. It’s cableless and tiny which is a perfect smoker to use at home or camping. It’s now available at our Shop!

就咁睇唔太睇得出佢地經過煙燻處理,不過食落既分別非常明顯,啖啖既香木味道更提升原先食物既鮮味,尤其係雞翼經過煙燻處理後,味道直程有輕微轉變,非常好食!
By looking at it you probably won’t notice that they are smoked but when you take a bite, the difference in flavor is obvious. The wood aroma enhances umami of the ingredients, especially for the wings, after smoking the flavor has changed a bit and it’s very delicious!

就算係餐廳都唔係間間有即燻食物提供,依間日本餐廳就有煙燻雞串提供,睇上去好夢幻,其實有部機係屋企都輕易做到煙燻效果!
Smoked food cannot be find in many restaurant. In this Japanese restaurant they serve fancy smoked chicken skewers. With a food smoker, it’s actually very easy to DIY at home!
Green House煙燻機開箱 Unboxing our Food Smoker

打邊爐最緊要係個爐,煙燻食物最緊要當然係要有煙燻機,依個就係我地今次用到既Green House煙燻機
This is the Green House food smoker we used in this recipe

打開箱,有煙燻機本體、導氣管、清潔掃同埋食譜
Unboxed. We have the food smoker, a smoke duct, a brush and a recipe booklet

入2粒AA電就可以用3個鐘,所以拎去camping都得
2 AA batteries are enough for the smoker to run for 3 hours. It’s a camping friendly design

用起上黎都超簡單,撳掣,燒木,等煙充滿容器就得
It’s very easy to use. Press the button, burn some wood chips and let the bowl filled with smoke
煙燻醉三拼-燻鮑魚 燻蛋 燻雞翼 Smoked & Drunken Trio – Abalones, Eggs and Wings

我地之前都分享過醉鮑魚既整法,今次既煙燻醉三拼首先都係要用醉香汁浸左先,有關醉鮑魚同埋醬汁既準備方法可以先睇返我地之前既文章,其餘既蛋同雞翼都係用同一個醬汁去浸
In our earlier article we shared the recipe of Drunken Abalone. For the Smoked and Drunken Trio this time we are using the same sauce to marinate the ingredients first.

整煙燻蛋之前要整醉蛋,整醉蛋之前要整溏心蛋
水滾後小心放入剛剛係雪櫃拎出黎既蛋,大火煮6分15秒
For the half boiled egg, we boil a pot of water and then we take out eggs from fridge and put them directly in the water and let it boil for 6m15s on high heat

一夠鐘就即刻將蛋撈起放入冰水
When time’s up, transfer the eggs to iced water right away

蛋浸涼後,小心剝殼,然後就可以放入埋醬汁度一齊浸一晚
After cooling down, gently remove the shells and then we can put them into the marinate overnight

到雞翼喇,首先將佢地浸水解凍,然後用力擠出雞翼中既血水,咁樣可以辟除雞翼腥味
For the chicken wings, we first unfroze them in tap water and then squeeze the remained blood out for removing unpleasant odor

然後烚雞翼,要雞翼口感嫩滑既秘訣係先用中火煮到水滾,之後冚蓋熄火,由佢焗15分鐘就可以撈起,放埋入醬汁一齊浸一晚
Then we can boil the wings. The secret of making the chicken wings tender is to switch off fire once after the water comes to boil. Then we close the lid and let it cook for 15 mins. After that put the wings into marinate overnight

經過一晚,醉三拼已經完成,我地拎出黎稍為抹乾佢地。如果太濕,煙燻後食物有機會變酸
In the next even the drunken trio is done. Now we wipe dry them to prepare for the smoking process. We need to wipe away excessive water to prevent food gets sour during smoking

將食材排好,其實最好係有個架托住,儘量增加煙同食物既接觸面積
Set the ingredients for maximum contact area with smoke. It’s best to place them on a rack if possisble

將保鮮紙蓋上碗,然後就可以如圖將煙燻機設置,撳掣,燒木,然後煙就會開始吹入碗內
Wrap the bowl with food wrap then we can set the food smoker as shown. Press the button, burn the wood chips then the smoke will be blown into the bowl

等d煙積聚到見唔到d食物就可以停喇
When the smoke concentrates like as when, we can stop the smoker

d煙會慢慢沉澱,由佢焗15分鐘就可以食架喇!非常方便,而且係難忘級別既好食!
Let the smoke do its work for 15 mins. After that the smoke will settle like this. Super yummy!
