Smoked food like Smoked Salmon, Tea Smoked Chicken, Shanghainese Smoked Eggs may sound familiar to you but have you ever thought that it’s very easy to make them at home? We are sharing our experience of making smoked & drunken trio which includes eggs, abalones and chicken wings.

By looking at it you probably won’t notice that they are smoked but when you take a bite, the difference in flavor is obvious. The wood aroma enhances umami of the ingredients, especially for the wings, after smoking the flavor has changed a bit and it’s very delicious!
Smoked food cannot be find in many restaurant. In this Japanese restaurant they serve fancy smoked chicken skewers. With a food smoker, it’s actually very easy to DIY at home!

煙燻醉三拼－燻鮑魚 燻蛋 燻雞翼 Smoked & Drunken Trio – Abalones, Eggs and Wings
In our earlier article we shared the recipe of Drunken Abalone. For the Smoked and Drunken Trio this time we are using the same sauce to marinate the ingredients first.
For the half boiled egg, we boil a pot of water and then we take out eggs from fridge and put them directly in the water and let it boil for 6m15s on high heat
When time’s up, transfer the eggs to iced water right away
After cooling down, gently remove the shells and then we can put them into the marinate overnight
For the chicken wings, we first unfroze them in tap water and then squeeze the remained blood out for removing unpleasant odor
Then we can boil the wings. The secret of making the chicken wings tender is to switch off fire once after the water comes to boil. Then we close the lid and let it cook for 15 mins. After that put the wings into marinate overnight
In the next even the drunken trio is done. Now we wipe dry them to prepare for the smoking process. We need to wipe away excessive water to prevent food gets sour during smoking
Set the ingredients for maximum contact area with smoke. It’s best to place them on a rack if possisble
Wrap the bowl with food wrap then we can set the food smoker as shown. Press the button, burn the wood chips then the smoke will be blown into the bowl
When the smoke concentrates like as when, we can stop the smoker
Let the smoke do its work for 15 mins. After that the smoke will settle like this. Super yummy!
