小夫妻Overcooked係我地係2020年疫症開始之初開展既project,搞搞下發現依件事好有趣,除左令我地兩公婆對在家下廚越黎越有熱誠,仲因為咁多左個共通語言,夫妻關係多一個值得享受既環節。
其實2年幾黎我地每隔一段時間就會搞搞新意思,由一開始只有FB IG分享下食物相,到後來整埋網頁分享食譜,到成立網店分享自己鍾意既廚具,到今次因為我地屋企用開隻易潔鑊用到變晒質都唔知,搵資料發現原來PTFE易潔鑊係好有問題,然後寫左篇易潔鑊安全整合,再直接係唔同地方搵生產商傾條件拎佢地既鍋返黎香港,最後成為你手上依隻黎自韓國既牛油果陶瓷不沾鍋。

點解陶瓷塗層係比PTFE好既選擇?
陶瓷塗層既原料係黏土/沙,被製成溶膏狀後,會被噴灑上鍋身,經高溫烘焗,形成堅固同滑溜不沾既塗層。由於佢化學組成成份係矽同氧,同沙、石、玻璃一樣,所以被認為係健康既選擇。
相比起PTFE鍋260°C就會受破壞而且釋放有毒氣體,陶瓷不沾鍋可以抵受450-500°C既高溫,而且就算去到高溫度,都只會損害不沾性能,唔會好似PTFE鍋咁釋放有毒既PFAS氣體。
要開鑊/養鑊嗎?
唔洗架,用洗潔精簡單清洗後就可以用,每次用完鑊亦唔洗養鑊。
使用上有咩基本注意事項?
用得不沾鍋基本上就係貪佢可以唔洗點用腦,開火就用得,不過都有少少要注意既地方,主要都係令塗層更長壽既須知:
- 所有易潔鑊受熱時塗層都會變得無室溫時咁堅硬,所以煮食時建議只用矽膠鑊鏟,亦避免炒有骨/ 硬殼等食物
- 清洗時可以使用海綿/布,避免用鋼絲刷或百潔布
- 避免長時間大火空燒
- 煮完野食唔好即時浸凍水,可以:
- 等個鍋攤凍先洗
- 個鍋熱既話,倒入熱水浸一浸佢再用凍水洗
- 濕少少廚紙就咁抹其實就最方便,睇片

我地用既矽膠鑊鏟,平既係12蚊店買,貴既係LC買。金屬鑊鏟固然唔用得,但就算係木質或塑膠鑊鏟其實都較硬身,長期磨擦易潔塗層都係無咁好的,要用就用矽膠鑊鏟會最好。
依d注意事項基本上所有有塗層既鑊都通用,所以都值得留意。
點樣可以發揮最好不沾性能?
其實做返d下廚基本動作就得:加油中火預熱好鍋先加食物,加左食物後唔好太大火,控制火喉避免燶。
而凍鍋落油同熱鍋落油都ok的,只要小心唔好大火空燒太耐就可以。
有頑固燶跡應該點搞?
食物受熱過度,無晒水份就會碳化,形成燶跡,有時燶跡攝左係鍋面上既疏油坑紋間就會比較難清洗。依個時候可以跟以下步驟做:

用洗潔精洗完仍發現有燶跡攝左係疏油坑紋之間

加入少少梳打粉

加少少水,滾佢一陣

再用防刮百潔布/ 海綿抹返佢就會靚仔返晒!
不過要提醒返,用得耐有些少burn marks實屬正常,平時d易潔鑊黑色你未必覺,但牛油果鍋係淺色,所有burn marks都會睇得一清二楚,其實唔洗成日過度清潔的,由個鍋上面有少少油脂積聚會更有效促進不沾性能

隻鍋可以用幾耐?
所有易潔鑊經長期使用後都會因高溫及磨擦而造成損耗,視乎使用習慣,一般都可以用到幾年,如果發現鍋面用到好花而不沾效能又有所減退,就要考慮換過個喇!而我地暫時密集式咁用左幾個月,性能同新用時一模一樣,可以對鍋既質量放心。
而大多數易潔鑊都係黑色或有石頭紋理,花左你都未必睇到,牛油果鍋花左會比較易睇到,如果用落一段時間察覺有輕微花痕,可仍然放心使用。

Some Sharing
Couple Overcooked is a project we started in 2020 when the pandemic had just started and it turned out to be a very interesting project for us. We found home cooking more fun and we began to have a new common language which brought our marriage life some extra enjoyment.
In these 2 years we started some mini-project from time to time. At the beginning Couple Overcooked was no more than sharing food photos on FB and IG. Later we created this website for sharing recipes and then we founded the cookware online store for sharing cookware we love. This time, the ceramic wok project started when we found out the PTFE non-stick pan we were using was actually degraded. After carrying out some research, to our surprise, we discovered that it’s actually very problematic to use a PTFE wok. We then connected with some manufacturers and eventually it becomes the Avocado Ceramic Wok from Korea you have in your hands. Throughout the journey, Couple Overcooked has been a very happy and fulfilling project for us.

Why is ceramic coating a better choice than PTFE?
Ceramic coating is made up of clay/ sand. After it has been made into sol-gel state, it is sprayed onto the wok and undergone baking for making the smooth and non-sticky coating. As the chemical composition is silicon and oxygen which is same as sand, stone and glass, it’s been regarded as a more healthy choice.
A PTFE wok will be degraded and release toxic gas at 260°C while a ceramic wok can withstand temperature of 450-500°C and even at this high temperature, only the non-stickiness will be undermined but not to release toxic PFAS gas like a PTFE wok.
Do I need to season the wok to maintain its condition?
No you don’t need to. Simply wash it before using it for the first time is going to be fine!
What should be noted while using the wok?
Basically you can just switch on fire and use this wok without worrying. For maximising its durability, you may want to:
- Use silicone spatula only. Under heat, coating on all non-stick pan will be less solid. If you use a rigid spatula it may scratch the coating fairly easily. Also avoid using the wok to cook food with bones/ shells
- Use sponge or cloth for cleaning. Avoid using wire brush or scouring pad
- Avoid heating the pan under high heat for long time
- After cooking avoid soaking the wok in cold water. You may:
- Let it cool down first
- Pour hot water and let it rest for awhile
- Wet some kitchen towel and wipe clean the wok (the most convenient way!). Watch the video

The silicone spatulas we are using. One was bought at a $12 Shop and the other one was bought at LC. Of course you should never use a metal spatula, but for a wooden one or hard plastic, you should also get rid of them because they are relatively harder than silicone and will have higher change to scratch the coating.
These points are also applicable to all sorts of non stick pans so it’s worth paying attention to them.
How to maximize its non-stickiness?
That’s fairly easy. Just do the basic cooking steps: Preheat the wok with oil. After adding the food do not turn the heat too high to prevent it from getting charred.
It’s fine whether you add oil to a cold wok or heated wok. Just make sure you don’t burn the wok on high heat without oil for too long.
How to handle burn marks?
When food is overheated and water evaporated out, it becomes charred and leaves burn marks on the wok. Sometimes when the burn marks leave between the fibre pattern on the wok, it can be tricky to clean. Follow the below steps to clean the wok:

Add some baking soda

Add a bit of water and boil it for awhile

Clean the wok again by a sponge and it will look handsome again!
But please be reminded that it’s perfectly normal to have some burn marks after some use. For a normal dark color PTFE pan the burn marks are camouflaged while the burn marks on Avocado wok are crystal clear. We don’t need to always over-clean the wok as leaving a little oil on the wok help facilitate its non-stickiness

How long can this wok be used?
All non-stick woks can be damaged under long time exposure of high temperature and scratching. Depending on your using habit, normally the wok can be used for a few years. If it’s discovered that the wok is worn out and become less non-sticky you may need to consider changing another one. We have used the wok quite intensively in these few months and it works just like when it’s new. You can rest assure about its quality.
It’s also worth mentioning that many non-stick woks you find in the market are in black color or rock pattern. It’s a kind of camouflage to hide the scratches. For the Avocado Wok, scratches, if any, are easier to be seen. The wok can continue to be used safely if mild scratches are found.
